Bukhara's food is so violently superior to most things you have
ever eaten in any kitchen, it is almost a lawless, rebel cuisine.. Here is Indian food so
compelling, in rugged textures and flavors which range from sulky and buttery to the
smokily robust, as well as multi-layering of spice-effects on the tongue...but why go on
like this?
The effect of all this sensual, sumptuous delight approaches the psychedelic. This is
honeymoon food for gods and goddesses. Do not drive or operate heavy machinery immediately
after eating here.

| Bengan Bartha -- baked eggplant mashed and cooked with onions tomatoes
and coriander. |

charcoal fire. |

vegetables, nuts and dried fruits, roasted in tandoor. |
| Aloo Bhjarwan __ scooped potatoes with a rich stuffing of raisins,
cashews., green chilies, coriander, garam masala and royal cumin, grilled in
tandoor. |

Roomali Roti, light as a handkerchief. |
| Kulfi Narangi -- frozen dessert made from pista enriched milk, served
in an orange shell. |

Bahar-E-Charman -- hot and cold delicacy, hot mountain berry sauce with
frozen "kulfi" ice cream.
Carnivorous friends will find exotic dishes marinated in pomegrante juice or black
